The Impossible Pie

I haven’t done much with dessert recipes so far, so I thought I would throw one in for the sheer fun of it!

This one is cheap and ridiculously easy to throw together, mostly from pantry staples and it is also absolutely delicious! It is called the impossible pie because you pour all the ingredients into the dish as a mix and during baking the flour sinks to the bottom to form a base and the coconut floats to up to form the top, the rest of the ingredients bake up to form a delicious custardy filling.

Give it a go next time when you have people turn up unexpectedly.

Ingredients

½ cup organic plain flour
1 cup sugar
1 cup desiccated coconut
4 eggs
2 cups of milk
2 tsp vanilla essence

Method (The easy bit!)

1. Butter up a 250mm pie dish.
2. Toss all ingredients into a blender, and blend until homogenous.
3. Pour the contents of the blender into the pie dish and bake at 180°C for 30 to 40 minutes, but keep checking after 30 minutes, until the coconut top is nicely browned.
